Avocado-Mango salad

Ingredients

Serves 4

  • Avocado, cut into cubes- 1 No.
  • Mango, cut into cubes- 1 No.
  • Onion, chopped- ½ cup
  • Tomatoes, chopped- ½ cup
  • Kidney beans/black beans- 1 cup
  • Lime juice- to taste
  • Salt and pepper to taste
  • Olive oil- 2 tbsp
  • Coriander leaves- to garnish

Method:

  1. Put the first 5 ingredients in a bowl. Mix everything.
  2. Add lime juice, olive oil, salt and pepper to the bowl. Toss everything together.
  3. Serve it as a meal or as a side dish.
