Oats Chilla Frankie

Ingredients: 

  • 2/3 cup (100 g) Prolicious Oats Chilla Mix 
  •  1.5 cups (220 ml) Water  
  • 1 tbsp mint chutney  
  • A pack (200 g) of Tofu  
  • 2 tbsp Lemon Juice  
  • 1/2 cup Broccoli florets  
  • 1/2 cup Tomatoes  
  • 1 tsp Chilli Powder  
  • 1/2 tsp Smoked Paprika  
  • 1/4 tsp Cumin Powder  
  • 1 cup shredded Vegan Cheese  
  • Salt/Pepper to taste 
  •  Cooking Oil  
  • Coriander to garnish 

METHOD: 

  • Mix the premix and water gradually to make batter of pouring consistency. Heat a non-stick pan and pour a ladle full of chilla batter. Spread the batter evenly and cook on both sides to make a crisp chilla. 
  • In a pan over medium heat, add a small drizzle of oil and add tofu cubes. Cook for about 10-15 minutes until most edges are browned, turning every 3-5 minutes. Add a dash of salt and lime juice in the last 2 minutes. Remove from pan.  
  • Add broccoli, tomatoes, and spices in an another pan and cook over medium heat until soft.  
  • Place the prepared Prolicious oats chilla on a plate, apply green chutney. Sprinkle the vegan cheese and assemble tofu, broccoli, and tomatoes and make a frankie roll.  
  • Top with coriander, enjoy!
