Recipe Card

Prep Time: 15 minutes

Cook Time: 10–12 minutes

Total Time: 25–30 minutes

Servings:

Difficulty: Easy

Yield : 1 Plate

Ingredients

For the Macaroni

  • 200 g macaroni or pasta
  • Water, as required
  • Salt, as required

Cook the pasta according to the instructions on the packet. For a salad, cooking it until just tender rather than overly soft works particularly well.

For the Pesto

  • 1 cup fresh basil leaves
  • ¼ cup walnuts
  • 3–4 garlic cloves
  • ¼ cup Parmesan cheese
  • Salt and black pepper, to taste
  • 2–3 tbsp olive oil

Blend everything together until you get a smooth or slightly coarse pesto, depending on your preference.

For the Dressing

  • ½ cup hung curd or Greek yogurt
  • 2–3 tbsp prepared pesto
  • Salt, to taste
  • 1 tsp lemon juice
  • 1 tsp olive oil

Mix everything together until creamy and well combined.

For the Salad

  • Cooked macaroni
  • ½ onion, chopped
  • 8–10 cherry tomatoes, halved
  • ½ cucumber, chopped
  • Prepared dressing

You can also add bell peppers, corn, spinach, broccoli or other vegetables you enjoy.

How to Make High-Protein Macaroni Salad

Step 1: Cook the Macaroni

Bring plenty of water to a boil and add some salt.

Add the macaroni and cook according to the packet instructions.

Once cooked, drain the pasta and rinse briefly with cool water to stop the cooking process and cool it down for the salad.

Allow it to drain properly so excess water doesn't dilute the dressing.

Tip: Don't overcook the macaroni. Slightly firm pasta holds its shape better and gives the salad a much better texture.

Step 2: Make the Fresh Pesto

Add the basil leaves, walnuts, garlic, Parmesan, salt, pepper and olive oil to a blender.

Blend until combined.

You can keep the pesto slightly coarse if you enjoy a little texture.

The combination of fresh basil, garlic, walnuts and Parmesan gives this salad its signature flavour without requiring a complicated sauce.

Step 3: Prepare the Protein-Rich Dressing

Add the hung curd or Greek yogurt to a bowl.

Mix in 2–3 tablespoons of the prepared pesto.

Add lemon juice, olive oil and a little salt.

Whisk everything together until smooth and creamy.

This is an important nutritional upgrade compared with a traditional creamy pasta salad dressing.

Instead of making mayonnaise the primary base, curd or Greek yogurt contributes protein while creating the creamy consistency you want.

Step 4: Build the Salad

Add the cooked macaroni to a large mixing bowl.

Add chopped onion, halved cherry tomatoes and cucumber.

Pour over the prepared dressing.

Gently toss everything together until the macaroni and vegetables are evenly coated.

Taste and adjust the seasoning if needed.

Step 5: Chill and Serve

Refrigerate the salad for around 20–30 minutes before serving.

This gives the flavours time to come together and makes the salad particularly refreshing.

Serve chilled and enjoy.

Why Is This a Good Weight-Loss Recipe?

Let's address the most important question.

How can pasta be part of a weight-loss meal?

Weight loss ultimately depends on maintaining an appropriate energy deficit over time. No individual food automatically causes weight gain or weight loss.

What matters is the overall dietary pattern, portion sizes, energy intake and how satisfying your meals are.

This is where adding protein becomes particularly useful.

How Protein Can Support Weight Loss

Protein plays several important roles during weight management.

1. Protein Can Help With Satiety

Protein is generally more satiating than carbohydrate or fat on a calorie-for-calorie basis. Including adequate protein in meals can therefore help you feel fuller and potentially make it easier to manage overall food intake.

That matters because one of the biggest challenges during weight loss isn't knowing what to eat.

It is staying satisfied between meals.

A bowl of plain macaroni may leave you hungry relatively quickly.

Macaroni combined with a protein-rich dressing, vegetables and healthy fats creates a more balanced meal.

2. Protein Helps Support Lean Muscle During Weight Loss

When you lose weight, the goal isn't simply to see the number on the scale go down.

Ideally, you want to preserve as much lean muscle mass as possible while reducing excess body fat.

Adequate protein, combined with resistance training and an appropriate calorie deficit, can help support the maintenance of lean mass during weight loss.

This is especially important if you are exercising regularly.

3. Protein Has a Higher Thermic Effect

Your body uses energy to digest, absorb and metabolise food.

Protein has a higher thermic effect of food compared with carbohydrates and fats, meaning a greater proportion of the energy from protein is used during these processes.

This doesn't make protein a "fat burner", but it is one of the reasons protein is useful as part of a balanced weight-management diet.

Practical Tips to Make This Salad Weight-Loss Friendly

Watch your portion

Even nutritious foods contribute calories. If you're aiming for weight loss, portion size still matters.

Increase the vegetables

Want a bigger bowl? Add more cucumber, tomatoes, bell peppers, broccoli or leafy greens rather than simply increasing the pasta.

Use Greek yogurt or hung curd

Choose whichever fits your dietary preferences and availability. Greek yogurt can provide a convenient source of protein, while hung curd works beautifully in Indian kitchens.

Don't go overboard with pesto

Pesto is delicious, but ingredients such as walnuts, Parmesan and olive oil are energy-dense. A little goes a long way.

Add more protein if needed

If this is your main meal and your overall protein requirement is higher, you can add tofu, paneer, chickpeas, edamame or another protein-rich ingredient.

Eat it mindfully

A cold pasta salad can be very easy to eat quickly. Take your time, sit down and enjoy it rather than eating directly from the mixing bowl.

FAQs

Is pasta good for weight loss?

Pasta can be included in a weight-loss diet. The overall calorie intake, portion size, dietary pattern and balance of the meal matter more than avoiding pasta completely.

Is this macaroni salad high in protein?

It has more protein than a basic macaroni salad because the dressing uses hung curd or Greek yogurt along with Parmesan. The exact protein content will depend on the specific ingredients and quantities used.

Can I use regular curd?

Yes. For a thicker dressing, strain regular curd through a muslin cloth or fine sieve for a few hours to make hung curd.

Can I make this without Parmesan?

Yes. You can omit Parmesan or experiment with nutritional yeast or another ingredient depending on your dietary preferences.

Can I add Prolicious UP It! to this recipe?

If you want to further increase the protein and fibre content, UP It! can be incorporated into suitable savoury preparations. However, this particular recipe already gets its protein contribution from Greek yogurt/hung curd and Parmesan.
