Ingredients

For the Payasam

  • 1 cup Prolicious Millet Vermicelli
  • 1 litre milk
  • ½ cup jaggery, grated or powdered
  • 1 tsp ghee
  • ½ tsp cardamom powder
  • 1 tbsp cashews, roughly chopped
  • 1–2 tbsp chopped pistachios or almonds, optional

The traditional preparation of Semiya Payasam typically involves roasting vermicelli in ghee, simmering it in milk and finishing it with sweetener, cardamom, cashews and raisins.

How to Make Prolicious Millet Vermicelli Payasam

Step 1: Roast the Nuts
Heat ghee in a pan. Add the chopped cashews and almonds and roast them until lightly golden and aromatic. Remove the roasted nuts and keep them aside.

Step 2: Roast the Vermicelli
In the same pan, add the Prolicious Millet Vermicelli. Roast it for a few minutes on low to medium heat, stirring continuously, until lightly golden.

Step 3: Add the Milk
Pour in the milk and add sugar. Mix everything well.

Cook the vermicelli in the milk, stirring occasionally to prevent it from sticking to the bottom of the pan.

Step 4: Add the Roasted Nuts
Once the vermicelli starts to soften, add the roasted cashews and almonds back to the pan. Mix well and cook for another 2 minutes.

Your creamy Prolicious Millet Vermicelli Payasam is ready to serve.

What Makes This Payasam Special?

There is something wonderful about updating a traditional recipe without losing what makes it special.

The goal isn't to turn payasam into something completely different.

It should still feel like payasam.

You should still get the creamy texture, the sweetness of jaggery, the fragrance of cardamom and the crunch of roasted cashews and raisins.

The difference here is the choice of Prolicious Millet Vermicelli as the base.

Millets have long been part of traditional Indian food cultures, and using millet-based ingredients is one simple way to bring more variety into everyday meals.

And because the vermicelli is used in a familiar format, you don't have to learn a completely new recipe to include it.

The food stays familiar. The ingredient gets an upgrade.

Why Jaggery Works So Well in Payasam

Jaggery gives this payasam its characteristic deep, caramel-like sweetness.

Unlike refined sugar, jaggery also contributes its distinctive colour and flavour, which pairs beautifully with cardamom, roasted nuts and milk.

However, it is important to remember that jaggery is still a form of added sugar. Calling it traditional or natural does not make it sugar-free.

The advantage here is primarily culinary: jaggery gives the payasam a rich, traditional flavour that works beautifully with the millet vermicelli.

So enjoy it as what it is meant to be: a festive dessert.

Tips for the Perfect Vermicelli Payasam

Roast gently

Don't rush the roasting process. Low to medium heat allows the vermicelli to develop a pleasant aroma without burning.

Stir while cooking

Vermicelli can stick to the bottom of the pan as it cooks in milk. Stir occasionally to prevent this.

Add jaggery carefully

If using milk, allow the mixture to cool slightly before incorporating jaggery to reduce the risk of the milk splitting.

Adjust the consistency

Payasam becomes thicker as it cools. If it becomes too thick, simply add a little warm milk and mix.

Don't overdo the garnish

Cashews and raisins add flavour and texture, but you don't need a large quantity. A little goes a long way.

Serve it your way

Some people love payasam warm and creamy. Others prefer it chilled.

There is no wrong answer.

Easy Variations

Make it more coconut-forward

Replace part of the milk with coconut milk for a richer, more Kerala-inspired flavour. Coconut milk is also commonly used in regional variations of payasam.

Add nuts

Almonds, pistachios and walnuts can be added along with cashews.

Add a festive touch

A tiny pinch of edible camphor can be used in traditional festive preparations, if desired.

Make it lighter

Use lower-fat milk and reduce the amount of ghee used for roasting the vermicelli and nuts.

Frequently Asked Questions

Can I use jaggery instead of sugar in vermicelli payasam?

Absolutely. Jaggery works beautifully with vermicelli payasam and gives it a deeper, more traditional flavour. If using milk, add the jaggery after the vermicelli has cooked and the mixture has cooled slightly to reduce the possibility of curdling.

Can I serve this payasam cold?

Yes. Payasam can be enjoyed warm or chilled. Keep in mind that it will thicken as it cools, so adjust it with a little warm milk before serving if required.

Can I make this payasam vegan?

Yes. Dairy milk can be replaced with a plant-based milk or coconut milk. If using coconut milk, avoid prolonged boiling and add it towards the end for a creamy texture.

What makes Prolicious Millet Vermicelli different in this recipe?

It gives you a convenient way to bring a millet-based ingredient into a familiar festive dessert. You don't have to completely change the way you cook payasam. Simply use Prolicious Millet Vermicelli in place of conventional vermicelli.

Can I prepare this in advance?

Yes. Payasam can be prepared ahead of time and refrigerated. It will thicken as it sits, so add a little milk and gently warm it before serving if needed.
