What Makes This Recipe Better Than Regular Fried Rice?

Traditional fried rice is usually made with white rice and can become quite oil-heavy depending on how it is prepared.

This recipe gives you a simple everyday alternative using Prolicious Millet Vermicelli, which is made with little millet and durum wheat and provides more protein and fibre than regular vermicelli.

Add paneer, vegetables and a flavourful thecha, and you have a more balanced lunch that does not compromise on taste.

It is proof that a healthier meal does not have to be boring.

Ingredients

  • Paneer – 50 g, cubed
  • Prolicious Vermicelli – 1 cup, boiled
  • Onion – ½, chopped
  • Tomato – 1 small, chopped
  • Green bell pepper – ½, chopped
  • Oil – 1 tsp
  • Cumin seeds – ½ tsp
  • Garlic – 2–3 cloves, chopped

For Thecha

  • Fresh coriander – ½ cup
  • Green chillies – 2–3
  • Garlic – 2–3 cloves
  • Ginger – ½ inch
  • Lemon juice – 1 tsp
  • Salt – as per taste

Method

Prepare the thecha: Add coriander, green chillies, garlic, ginger, lemon juice and salt to a blender.

Blend into a coarse paste.

Keep aside.

Prepare the tempering: Heat oil in a pan. Add cumin seeds and chopped garlic. Sauté until fragrant.

Add the vegetables: Add chopped onion, bell pepper and tomato. Cook until the vegetables become slightly soft.

Add paneer cubes and mix well. Cook for a few minutes until the paneer is lightly cooked.

Add the thecha: Add the prepared coriander-green chilli thecha and mix everything well so the flavours coat the paneer and vegetables.

Add vermicelli: Add the boiled Prolicious Vermicelli and gently toss everything together.

Serve: Cook for another 1–2 minutes, then serve hot.

Tips for the Perfect Tiffin

Keep the thecha slightly coarse:

A coarse thecha gives the vermicelli more texture and lets you get little bursts of garlic and chilli in every bite.

Don't overcook the vegetables:

Slightly crunchy bell peppers add texture and keep the dish from becoming mushy.

Adjust the chilli:

Thecha is meant to be spicy, but you can easily reduce the green chillies to suit your taste.

Add more vegetables:

You can add carrots, beans, peas, corn or cabbage depending on what you have at home.

Make it more filling:

If you need a larger lunch, increase the paneer or add another protein-rich side such as curd.

For meal prep:

Prepare the thecha in advance and refrigerate it. When you are ready to cook, the dish comes together even faster.

FAQs

1. Is Thecha Paneer Fried Vermicelli good for a tiffin?

Yes. It is quick to prepare, easy to pack and tastes good even after it has cooled slightly. The combination of paneer, vegetables and millet vermicelli also makes it a more complete lunch option.

2. Can I make this recipe without paneer?

Yes. You can replace paneer with tofu, cooked soya chunks or another protein source of your choice.

3. Can I make this vermicelli less spicy?

Absolutely. Reduce the number of green chillies while making the thecha. You can also remove the seeds from the chillies for a milder version.

4. Is this healthier than regular fried rice?

It can be a more protein- and fibre-rich option, especially because this recipe uses Prolicious Millet Vermicelli along with paneer and vegetables. The overall nutrition will still depend on your portion size and how much oil and paneer you use.
