Introduction

Rasmalai is one of those Indian desserts that instantly feels festive. Soft, creamy and flavoured with cardamom and saffron, it has a special place on the dessert table.

This recipe gives the classic dessert a creative twist by using Prolicious Millet Vermicelli to make the rasmalai balls.

The vermicelli is first roasted with ghee and chopped dry fruits until golden and aromatic. It is then cooked with water and sugar, combined with khoya and allowed to rest. The mixture is shaped into small balls and dipped into creamy custard milk flavoured with cardamom and saffron.

The result is a dessert that looks festive, tastes indulgent and gives a familiar Indian sweet a completely new presentation.

What Makes Prolicious Millet Vermicelli Special?

Prolicious Millet Vermicelli brings a millet-based twist to everyday vermicelli.

It can be used in much more than savoury dishes. From breakfast and lunch recipes to festive desserts like this Vermicelli Rasmalai, it is versatile enough to fit into different kinds of recipes.

Its millet-based formulation also makes it an interesting alternative to conventional vermicelli when you want to add more variety to your meals.

Why This Vermicelli Rasmalai Stands Out

Traditional rasmalai usually uses chenna or paneer-based dumplings.

This version takes a completely different route.

Here, roasted millet vermicelli, dry fruits and khoya come together to create the rasmalai balls, while the creamy custard milk gives them the familiar rasmalai-style finish.

The combination of:

Golden vermicelli + dry fruits + khoya + saffron milk = a festive dessert with a delicious twist.

• A few strands of saffron

Step-by-Step Method

Step 1: Roast the Vermicelli

Heat a pan and add Prolicious Millet Vermicelli.

Add ghee and chopped dry fruits.

Mix everything well and roast until the vermicelli turns golden brown and the dry fruits become aromatic.

Step 2: Cook the Vermicelli

Add water and sugar to the roasted vermicelli.

Mix well and cook until the vermicelli becomes soft and the mixture comes together.

Step 3: Add Khoya

Add khoya to the cooked vermicelli.

Add sugar, cardamom powder and saffron.

Whisk everything well until the custard powder is properly mixed and there are no lumps.

Tips & Variations

Tips

FAQs

Can I use any vermicelli for this recipe?

You can, but Prolicious Millet Vermicelli gives this recipe its distinctive millet-based twist and texture.

Can I make the vermicelli balls without khoya?

Khoya helps add richness and binding to the mixture. If you want to experiment, you can try adjusting the quantity of milk solids, but the texture may change.

Should Vermicelli Rasmalai be served hot or cold?

It can be enjoyed either way, but chilling it allows the vermicelli balls to absorb more of the creamy saffron milk.

Can I add more dry fruits?

Yes. Almonds, pistachios, cashews and walnuts can all be used according to your preference.

Can I make this dessert less sweet?

Absolutely. Adjust the sugar in both the vermicelli mixture and milk according to your taste.
