How to Make Vrat Atta Handvo 

Step 1: Prepare the Vegetable Mixture 

Take a large bowl and add grated dudhi, grated carrot and grated paneer.

These ingredients add moisture, texture and a subtle sweetness to the handvo. 

Step 2: Make the Green Masala 

In a mixer, add ginger, green chilli and cumin seeds. 

Grind them into a coarse paste and add this mixture to the bowl. 

Give everything a good mix. 

Step 3: Add the Wet Ingredients 

Add curd to the vegetable mixture and mix well. 

The curd adds a mild tang and also helps create a softer texture in the handvo. 

Step 4: Add the Flours 

Now add coarsely ground sama atta.

Followed by Prolicious Vrat Atta.

Add salt, fresh coriander and water as required. 

Mix everything well until you get a thick but pourable batter. 

Step 5: Let the Batter Rest 

Cover the batter and let it ferment for around 15 minutes. 

This short resting time allows the ingredients to hydrate and helps develop a better texture. 

Step 6: Add Baking Soda 

After fermentation, add baking soda along with a little water. 

Mix gently but thoroughly so that the baking soda is evenly distributed throughout the batter. 

Step 7: Prepare the Tempering 

Heat oil in a pan. 

Add cumin seeds and sesame seeds and let them crackle. 

This simple tadka adds a lovely aroma and gives the handvo a deliciously crisp base. 

Step 8: Cook the Handvo 

Pour the prepared batter into the pan and spread it evenly. 

Cover and cook on a low to medium flame until the bottom turns golden and crisp. 

Carefully flip the handvo and cook the other side until it is nicely browned and completely cooked through. 

Step 9: Serve 

Once cooked, transfer the handvo to a plate and let it rest for a few minutes. 

Cut it into slices and serve warm.
