Modak, one of the favorite sweets of Lord Ganesha, are Maharashtrian festive dumplings made with a filling of coconut and jaggery. Here is the recipe of steamed modak, also known as "Ukdiche Modak” with a twist of protein and millets.

INGREDIENTS:

For Modak:

  • 1 cup Prolicious Millet Dosa Mix
  • ¼ cup Rice Flour
  • 2 tsp oil/ghee

 

For Filling:

  • 1 Cup Grated Coconut
  • 1/2 Cup Organic Jaggery Powder
  • 1/4 Cup Water
  • 2 Tbsp Ghee
  • 1 Finely Chopped Date
  • 1 Tsp Cardamom Powder
  • 1/2 Tsp Salt

 

METHOD:

Preparation of filling:

  1. In a kadai, heat 1 tbsp of ghee and add jaggery.
  2. As the jaggery starts melting, add grated coconut and chopped dates.
  3. Mix well and cook the filling on low heat.
  4. Keep the mixture aside and let it cool.

 

 Preparation of Modak:

  1. In a pan, take 2.5 cup of water, ¼ tsp of oil and ¼ tsp salt. Let this mixture come to boil.
  2. Add 1 cup Prolicious Pancake Mix & 1/4 cup rice flour. Stir and mix the flour with water.
  3. Stir till all the flour is mixed with the water. Switch off the heat & remove the pan from the burner. Cover the pan with a lid for 4 to 5 minutes.
  4. Now put all the dough on a plate or thali or in a bowl. Gather the dough together and begin to knead it. If you feel the dough looks dense or hard or dry, then just add a few teaspoons of warm water and continue to knead.
  5. Knead the dough properly ensuring that it isn’t too dry nor too wet.
  6. Divide the dough into small portions and roll it into small balls. You can apply water to your palms.
  7. Take a ball and flatten it with your finger on your palms, to small bowl shape of medium thickness.
  8. Place a spoonful of stuffing in the center.
  9. Press the edges and bring them together to give them the shape of modak.
  10. Make all the modak in the same way.
  11. Keep the modak covered with a damp muslin or cotton napkin.

 

Steaming the Modak:

  1. On a medium-high flame bring 1.5 cups to 2 cups of water to a rolling boil in a steamer, a pot or a stove-top pressure cooker. Place a steel rack or a trivet in the water.
  2. Place the modak basket in the pot and cover the pot or cooker. If using a pot, make sure the lid has a vent for the steam to escape. If using a stovetop pressure cooker remove the whistle.
  3. Steam for 10-12 minutes on a medium flame. Switch off the flame and let it rest for 5 min.
