A sweet and healthy delight to pamper your taste buds!! Relish this high protein stuffed pancake waffle with the dip of your choice. Prolicious pancake mix gives 2X protein compared to regular pancakes and gives good amount of fiber. It’s made with the goodness of legumes and pulses.

Ingredients

For Pancake Waffle

  • Prolicious 2X Protein Pancake mix(1/2 Pack) or 1 cup
  • Water- As required to make a batter with thick consistency (¾ cup)
  • Oil to grease the waffle maker

    For the stuffing:

    • Grated fresh coconut ½ cup or 30g
    • Grated/powdered jaggery ½ cup
    • Chopped almonds 2 tbsp.
    • Elaichi powder 1 tsp.
    • Ghee/oil 1 tsp.

    For garnishing:

    • Chocolate syrup
    • Peanut butter

    Instructions

    For the stuffing:

    • Heat 1 tsp. Ghee/oil in a nonstick skillet and add the grated coconut and jaggery to it.
    • Let the jaggery melt and then add 2 tbsp. of chopped almonds and 1 tsp. of elaichi powder.
    • Mix and heat for 2 minutes and switch off the heat

    For Pancake Waffle preparation:

    • In a bowl mix 1 cup of pancake mix with ¾ cup water to make a batter of thick consistency.
    • Switch on the waffle maker and grease it with oil.
    • Pour the prepared batter into the waffle maker and let it cook for 10 minutes or till crisp and done

    For Assembling

    • Take a waffle and fill in the stuffing. Cover it from top with another waffle.
    • Garnish with the chocolate syrup and serve with peanut butter dip or any other sweet dip of your choice.

    Tips Tricks & Facts

    • Mix the pancake batter evenly to prevent lump formation
    • Don't overcook the coconut and jaggery
    • Open and check the waffle maker after 5 minutes to prevent the waffle from getting burnt
    • Can also use chopped nuts for garnishing
